OUR CHEF
Born in Venezuela and raised in the vibrant city of Miami, Chef Miguel has always been deeply connected to the culinary world. Growing up in a family where food held a central place, he developed a passion for cooking that transcended borders. His love for diverse cultures has inspired his culinary journey, leading him to explore flavors from around the globe. Miguel earned his culinary degree at Johnson and Wales University in Rhode Island, which laid the foundation for his culinary career.
His travels have taken him to Italy, New Zealand, and Bulgaria, where he immersed himself in local cuisines and cooking techniques. These experiences have enriched his culinary repertoire, allowing him to blend traditional methods with innovative approaches. In the United States, he honed his skills in renowned restaurants across Washington, DC, Charleston, and Miami, gathering invaluable insights into various culinary styles.
Before settling on St. John, Miguel served as Chef de Cuisine at an acclaimed Italian restaurant on Nantucket, focusing on farm-to-table cuisine that highlighted the importance of fresh, local ingredients. His approach to cooking emphasizes sustainability and the beauty of seasonal produce, making each dish a reflection of his travels and experiences.
Now residing in Coral Bay with his partner Terra, their daughter Maya, and their beloved family dog Mezcalita "Lita," Miguel finds joy in the simple pleasures of life. When he’s not in the kitchen, you can find him enjoying the outdoors, tending to his garden, playing beach volleyball, or cooking for his loved ones.

Johnny Lime offers a casual dining experience that showcases traditional BBQ with a vibrant twist. Our menu features an array of expertly smoked meats, infused with bold flavors that pay homage to local Caribbean culinary traditions. We offer freshly smoked meats, as well as a variety of vegetable-focused sides that cater to vegetarians and vegans alike.
Our handcrafted cocktails are made from fresh-squeezed juices, premium liquors and a medley of local flavors.

Yes! Many of our sides are vegetable based and can be made vegan upon request. We offer vegan and vegetarian plates that include an assortment of sides. Just ask!

Yes! Most of our food is gluten free with the exception of a few items. We also have a gluten free bread option for sandwiches.

We take to go orders in person and over the phone. If you are placing an order for a large party, please consider placing the order a day or two in advance to give us time to prepare. Please also consider that wait times for to go food are dependent on how busy the restaurant is. But you are more than welcome to enjoy a beverage and the atmosphere while you wait!

One of Miguel’s core beliefs is that creating and sharing good food makes the world a better place. He is more than happy to share recipes for dishes as well as tips and tricks for making delicious food in your kitchen at home.
